Savoury French Toast

It has been a while, I know and I apologise. I have been super busy with work and sports but I finally have some free time to bring you a recipe with which I have been playing around in my head and I could finally make it reality: savoury french toast with smoked paprika, topped with avocado (duh) and sour cream. Super easy to make and perfect to use up some leftover bread. So... did anyone say "brunch"?

What do you need?

- some old bread, thickly sliced
- eggs (1 egg/ 2 slices of bread)
- 1 tsp of smoked paprika powder
- a sliced avocado
- some sour cream
- chives, chopped
- salt & pepper
- a good knob of butter

What do you need to do?

You will need to start by making your egg mixture by whisking together your eggs, paprika powder, 1 tsp of sour cream and some salt and pepper for seasoning. Place your slices of bread in it, turning them over after a minute or two.
Heat your butter in a non-stick pan. Wait for your butter to melt and start foaming. The slices of bread should be soaked in the egg mixture and when your butter is ready, place them in the pan. Brown on both sides. When they are ready, top with avocado slices, sour cream, chives and a little bit of extra smoked paprika.
